Southwestern Turkey Spinach Egg Florentine

This recipe was submitted by Jonathan, who didn’t leave a url so I am assuming he doesn’t have a blog.  Thank you very much for submitting..this also qualifies you for the monthly drawing;)

  • 1 - Thomas Hearty Grain 100% Whole Wheat Bagel
  • 1/4 Cup - Southwestern Egg-Beaters Eggs
  • 6 Half Slices - Turkey (Prefer Oil Browned Turkey)
  • 3 Cups - Fresh Express Baby Spinach
  • 1/2 Oz - Galaxy Foods Veggie Shreds Dairy Free Cheese
  • 1/4 Cup - Athenos Reduced Fat Feta Cheese

1: Cut your Thomas Hearty Grain 100% Whole Wheat Bagel, and place it in the toaster
2: Pour your 1/4 cup of Southwestern Egg-Beaters Eggs into a small bowl
3: Mix in 1/4 cup of Athenos Reduced Fat Feta Cheese
4: Place bowl with egg and feta cheese mixture into the microwave for roughly 1 minute 50 seconds
5: Start toasting your bagel
6: Cut 3 full slices of Turkey into 3 half slices so you have a total of 6 half slices
7: Place 3 half slices on each side of the toasted bagel
8: Place 1 1/2 cups of Fresh Express Baby Spinach on top of each side of the bagel
9: Place bagel with turkey and spinach onto a paper plate
10: Place cooked egg with feta cheese mix onto thin end of the bagel
11: Sprinkle 1/4 oz Galaxy Foods Veggie Shreds Dairy Free Cheese on each end of the bagel topping both spinach and egg
12: Place completed product into microwave once again for roughly 45 to 60 seconds so the cheese can some what melt
13: Remove product from microwave and put together like a sandwich
14: Eat promptly
