Big Breakfast Cookie

INGREDIENTS:
1/2 C Oil
1/2 C brown sugar
2 C Oats (rolled or quick)
1 egg beaten
1 1/2 tsp baking powder
1 tsp salt
2/3 C milk
1 tsp vanilla
DIRECTIONS:
(hint)I usually sneak in 1/3 C wheat germ. Can also add raisins, chocolate chips, ect.
Mix together, pour into 9″ greased pie dish, cook for 30-35 min in 350 oven.











I make something similar that has a lot of nuts and dried fruit in it as well..and by nuts I mean the healthy ones - almonds, pecans, not the brazilian nut or cashews that are so high in fat! I use some oil, awesome fig preserve, honey or maple syrup -again since it is healthier than any kind of sugar. These I heat up to form a binding syrup for the rolled oats, nuts, sesame seeds, wheatgerm/ground flaxseed, sundried fruits - cranberries, apricots etc, and bake at 170 oven for about 40-45 mins. I usually keep some in my handbag for a quick snack in the office in the evenings

Great breakfast for on-the-go , but it would definitely need fruit and nuts to compete with commercial cereal bars.
A photo of the finished product for this recipe post woul help.

This breakfast cookie looks good, but there is no photo - that would definitely help.
I would put 1/3 cup Flax & Company into this instead of the 1/3 cup wheat germ. (This is a product that has flax, almonds, sunflower seeds and other nuts and seeds - adds protein and fiber - and it comes in coconut for some added flavor if you want - you can check it out at http://www.matildaskitchen.com) - it would be perfect in this recipe.

What Genius!!! I have a daughter that hates breakfast. This recipe is perfect to put “healthy” items in, but still have a little choc. chips or raisins to make it seem like it’s not really a breakfast item. Thanks a bunch. I would have loved a picture of the finished product, though.
