Grandma’s Mexican Cornbread

Sometimes plain cornbread just doesn’t do it.  Sometimes you just gotta have a little more spice and flavor.  This is my grandmother’s recipe and it’s soooooo good, it could be eaten as a meal.  The one made here was for a bunch of co-workers so you may need to adjust the amounts accordingly.  Don’t freak out…it’s easy to to since the cornbread mix is premade;)

INGREDIENTS:

  • 3 pkgs cornbread mix
  • 2 pkgs bacon
  • 2-3 cups of cheese
  • 2 green chilies, chopped (from a can…pickled type)
  • 1 3/4 cup of frozen corn-defrosted
  • fresh jalapenos, cored & sliced (optional)

DIRECTIONS:

Mix cornbread according to package directions.  Throw in everything into the cornbread mix, except jalapenos, and mix together.  The jalapenos were put on these to let people know that they were spicy.  Of course, it makes for a really cute presentation as well!  Simply place the jalapeno on top, slightly push down into mix.  Bake at 350′ oven for 30-40 minutes or until golden brown. 

Tip: Obviously you can use a standard 9 x 13 casserole pan with these but using a muffin/bar pan makes it much more fun and distributes a nice even proportion for everyone.

Now remember, these jalapenos are optional but they do give much more eye appeal and it’s a great way to let people know that they may be spicy!
