Crunchy Catfish Fillets
Cooked up by Lori on Apr 15, 2008Catfish fillets are my one of my faves and I love them crunchy! Enjoy this seafood recipe!
INGREDIENTS:
- 2/3 cup crushed cornflakes
- 1/2 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 4 (4-ounce) catfish fillets
- 2 egg whites, slightly beaten
DIRECTIONS:
Preheat oven to 450′. Mix together cornflakes, salt, an pepper in a shallow bowl. Rinse fillets; pat dry. Dip fillets in egg whites, then coat with crumb mixture. Place fillets in a baking pan lined with foil and sprayed with nonstick spray. Bake about 10 minutes, or until fish flake easily when tested with a fork.
