Helping Lori Cook Up Something Green Red and Organic!

I’m always teasing Lori about “going green” and using more natural organic ingredients. I’m really just teasing her, I’m far from perfect. I just try everyday to be some shade of green and think we can all just do our very best. So while our blogging gal with the wooden spoon is away, I thought I’d contribute a few of my favorite summertime recipes that come straight from my local CSA (community supported agriculture).

Baked Tomatoes (serves 4)

  • 8 firm plum tomatoes
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons of raw sugar

After you have washed the yummy plum tomatoes, brush them with olive oil and set them in a pie plate that you have also oiled. Bake at 200 degrees for 4 hours. Sprinkle on the sugar and raise the heat to 300 degrees and bake for 30 minutes. The tomatoes will become browned and caramelized.

I like to serve this with steak and baked potatoes I make on the grill. I don’t usually turn the oven on for such a long period of time due to the energy consumption, so this is a real treat at my house. I usually make more than one batch because we gobble them right up!

  2. This is definitely unique…can’t say I’ve ever come across a tomato recipe that called for adding raw sugar. Will have to give this a try sometime.

  3. yum! this sounds super yummy! i think i’ll try it in my toaster oven - heats up the house less…therefore i run the air conditioner less - that’s kinda green, right?
