Roasted Zucchini on the Grill

We were given these enormous 12″ long Zucchinis the other day and the only thing we could think, at the moment, to do with them is roast them.  I’m sure we could have added all kinds of ingredients but we kept pretty darn simple as you’ll see below.

I did learn from Suncatcher, is that the smaller they are, the more flavor they have!  I did not know this and I’ll have to remember that when I purchase them:)

INGREDIENTS:

  • Biga$$ Zucchini
  • salt & pepper
  • butter

PREPARATION:

Slice down the middle, not cutting all the way through to the bottom.  Slice up some butter and place in the middle.  Season with salt & pepper and wrap in foil!  Stick on the grill for a bit (or oven) until Zucchini is soft & tender!  Just slice and serve:)

  1. Another good thing to do with zucchini is to make Zucchini Bread! It tastes kind of like banana bread, but not as sweet. I used to have a good recipe, but cannot find it anywhere. There are tons of recipes for this bread at allrecipes.com, though. If you try it, let me know how you like it! :)

  4. I’m usual avoid the grill like a yeast infection, but this one looks pretty easy! I love zucchini in pasta too. mmm.

  7. When ours get this big, I clean the outside skin and cut off the neck. And I cut off the very bottom. Then I cut the body into 1/2 round discs and dip them into a beaten egg. Then I dip into either flour or panko or crushed saltines(Ritz works too!). And then I lay them in a pan of melted butter and fry until golden brown, flipping once. Very tasty despite the seeds and even good cold for breakfast!
