Pea Salad

Believe it or not, I’m not a big fan of peas and I can’t stand mayonnaise but I LOVE pea salad!  Weird considering 2 of the main ingredients are peas and mayonnaise.  Sometimes salads that contain lettuce and tomato get boring which makes this great for a change.  It’s cold and delish!

Super easy to make and you can add your stuff like onions if that’s your cup of tea;)

INGREDIENTS:

  • Peas
  • Eggs (hard boiled)
  • Mayonnaise
  • Salt & Pepper

PREPARATION:

First, you need to get your eggs boiled.  You want hard boiled eggs for this recipe;) Do you always have the problem of the egg shell sticking to the egg???  A good rule of thumb is to stick your eggs in the water, when it starts to boil, take them out after 15minutes.  Then cool and peel:)  Okay, so now that they’re boiled, dice them up and set aside.  Open your peas, drain, and put into serving bowl.  Add eggs and mayonnaise.  I would start with about 2 or 3 eggs per can of peas and start with 1 tablespoon of mayonnaise and add to taste.  Season with salt & pepper.
