We are breakfast eaters around here so I can’t really afford to buy premade stuff like those bags full of pancakes or boxes of waffles.  It’s much cheaper to make my own from scratch and I have to say, much better tasting in my opinion.  They are very simple to make and even had my toddler help throw some powdered sugar on top for fun!  We eat pancakes with scrambled eggs and bacon.  YUM!  If pancakes aren’t your thing, try a traditional breakfast, bacon brunch bites or country fried sandwich.

INGREDIENTS:

  • 1 egg
  • 1 cup flour
  • 3/4 cup milk ( I usually add a bit more to my desired consistency)
  • 2 Tablespoons oil
  • 1 Tablespoon sugar
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt

DIRECTIONS:

Mix your dry ingredients together, then add in your wet ingredients.  Mix until smooth and to desired consistency. I pour into a measuring cup I have with a pour spout but you can use whatever.  Pour out onto semi-hot griddle; not too hot or the middle of your pancakes won’t cook through.  I use my tortilla griddle.  When it’s bubbled up on one side, flip!  Serve with your favorite syrup, fruit or sugar!

HINT: For more flavor, add a bit of vanilla!

  2. I’ve never made pancakes from scratch, only waffles. I might try it, it looks easy enough. Should I adjust anything if I add something in?

  5. Hi Cowboy’s Wife,

I have been coming here for a few months and get hungry every time I’m here. I’ve happily tried a few suggestions with great results.

However, I am back today to do a short review of your blog for our 109 Day Link Building Explosion Program. Your blog will be featured on Day 82. The program teaches ethical link building and networking.

    Thanks,
    Boris

  13. So far the best recipe I have found online for pancakes, doesnt hurt that your pics speak a thousand words and most of those words are “yummmmmmmmy”!My kids and I thank you for the great pancakes.Today they are making breakfast for me thats how easy this recipe is.This will be our households only way of making pancakes from now on!Thank you very much again!

  14. these are really the best pancakes i have ever eaten!

  15. Fantastic. I have been looking for a really good basic recipe, no fuss, no muss. These are easy and inexpensive to make. Thank you!

  16. I add protein powder. The boxed pancake mixes have it as an ingredient (whey powder). I assume they use it as a milk solids so that theirs are “just add water.” I’ve gone pretty heavy with it aiming for an Atkin’s type diet, but it affected taste. A Tbsp or less per cup of flower is pretty good though. Most come flavoured choc, van, or strawberry. In it’s preportion it is mild but also adds color.

Ironically some of the weight gain/mass builder meal replacement mixes for body builders are more atkin’s than your weight watchers and the like. Rather than 5 or 10 to 1, carbs to protein. The body builder stuff is closer to 2 to 1. But any where you can add protein will elivate metabolism and maintain muscle tone. For it’s own part it will help curb appetite also.

I’m a big fan of the pure protein powder. It goes a long Whey. Small pun there. But most protein sources are expensive and come with a lot of fat. While protein is one of our biggest needs for our bodies if not building muscle than maintaining them at a cellular level. Atrophy also could occur in small burst, like during sleep or if you skip breakfast. Losing muscle equates to losing metabolism.

  18. I just tried these this morning because we “didn’t” have anything for breakfast. Then I realized I had all ingredients in my pantry! I went to Weight Watchers website and put recipe in recipe builder to find out how many points they were. I made 8 out of this recipe and they are 3 points each. I love to add all natural peanut butter and light syrup. They were awesome. Thanks for sharing!

  26. My 7yr old woke up this morning demanding (I am being kind) pancakes as we have no school today (Veteran’s Day)….and of course no pancake mix in the house – so he continues to melt quite loudly – I founnd this recipe and it saved the day – I added a touch of nutmeg and some pearl sugar – a staple in our pancakes (I know probably a bit too sweet – but the kids like it that way). Thanx for saving the day!!!
