This guest post is brought to you by my mom who told me not to tell you that she submitted this recipe but I am ’cause that’s how I roll. Here’s my Mom’s Tortellini Soup!
INGREDIENTS:
- 3/4 lb cooked hamburger or Italian sausage crumbled
- 1 can Italian recipe stewed tomatoes (ie..Del Monte)
- 1 can (14 oz) beef broth
- 1 package tortellini, cooked al dente
- 1 can Italian green beans
- 2 green onions, sliced
DIRECTIONS:
Combine hamburger, tomatoes, broth and 1 3/4 cups water; bring to a boil. Reduce heat to low; stir in tortellini, green beans and onions. Gently cook until heated through. Season with salt and pepper. Sprinkle with grated Parmesan Cheese if desired.
Makes 4 servings (about 2 1/2 cups each)
TIP: If you don’t have Italian stewed tomatoes…I use regular stewed or just diced tomatoes in a can and add some Italian seasoning.

That sounds hearty and delicious. I love tortellini in soup!
Phoo-D
I have something extremely similar in the crockpot today! YUM!
I like this – I’d probably substitute the green beans because my husband and kids won’t eat it though, but I think they’d love the rest of it.
Oh my goodness! My kids and I made this soup. It was so YUMMY! I have never seen my family rave over soup before. This is a recipe we are putting in our book.
Tell your mom thanks for sharing it.
Yeah, is there a good substitute for the green beans? I hate them, especially from the can!!
Mmmm! That looks so yummy, especially for cold nights! And I love green beans.
I will definitely try this recipe…sounds really good!! I’m also going to give a copy to one of my friends (she’s a soup junky!).
Hey Jenny,
I make my italian soup with garbanzo beans instead of green beans, I also add two zucchini sliced and my family loves it.
I make mine without the green beans also and add chopped zucchini and carrots as well as about 1/2 a jar of spaghetti sauce.
