Just another side dish, nothing fancy. You can substitute the Velveeta cheese with something else. I used a little bit of Mexican cheese instead myself. Be on the lookout for an iPod Touch giveaway here or on my cowboy blog ’cause it’s coming soon! Might be better to subscribe;)
INGREDIENTS
- 1 pkg. frozen chopped broccoli & cauliflower
- 1/2 onion chopped
- 1 1/2 Tbsp. butter
- 1 can of cream of chicken
- 1/4 c. milk
- 1/4 lb. Velveeta
- 1 1/2 c. cooked rice
- salt and pepper
DIRECTIONS
Saute onion in butter. Add soup to onion, then add Velveeta cheese and milk. cook until cheese melts. Fold in cooked rice. Cook broccoli and add to cheese mixture. Pour into greased baking dish, cover and cook at 325′ for 30 minutes.
TIP: I usually start cooking my rice and during the last 5 minutes, throw in the broccoli, then drain.

I have made broccoli/rice type lots of times, never even thought about using cauliflower also (which I love). Wondering how this would be with brown rice? I’ve been trying to substitute brown rice for white rice in recipes lately, sometimes it works sometimes not so much.
This looks good. I’ve never made something like this with the cauliflower.
this looks yummy. i am wanting to try this one too. i have not ever had a casserole with cauliflower in it too! interesting!
This is very similar to my recipe except my boys just like brocoli in it so I just use the frozen brocoli.
I have been looking for a good broc/cheese casserole. I believe this will do it.

This sounds great and easy too. I think I’ll try using brown rice and real cheddar cheese though.
This sounds like a class assignment from home ec circa 1973, except it included jar mushrooms, mushroom soup(instead of the cream of chicken soup) and the cheese was sharp cheddar. This is a very nice casserole. It has been one of my favorites since my sister made it for me and my dad 36 years ago.
