Grilled Chicken Penne al Fresco

I told you I’d share the Grilled Chicken Penne al Fresco recipe from the Pampered Chef party and I am!  This is a recipe that can be made on the stove or in the microwave using the Deep Covered Baker.  It’s a time saving, delicious, and healthy meal! You can see a few more pictures in my original post!

INGREDIENTSPampered Chef Deep Covered Baker

  • 4 garlic cloves, peeled
  • 2 cups grape or cherry tomatoes
  • 3 cups uncooked mezze penne pasta
  • 3 cups chicken broth
  • ¾ cup dry white wine such as Chardonnay
  • ½ tsp each salt and coarsely ground black pepper
  • 1¼ cups lightly packed fresh basil leaves, divided
  • 1 oz Parmesan cheese, grated (about ¼ cup packed)
  • 2 cups diced grilled chicken breasts
  • Additional grated fresh Parmesan cheese
  • coarsely ground black pepper (optional)

DIRECTIONS

1. Spray Deep Covered Baker with olive oil using Kitchen Spritzer. Slice garlic into baker using Garlic
Slicer
. Add tomatoes. Cover; microwave on HIGH 4-5 minutes or until tomatoes begin to burst, stirring
after 2 minutes. Crush tomatoes using Mix ‘N Chop. Add pasta, broth, wine, salt and black pepper.

2. Return baker to microwave; cover and microwave on HIGH 16-18 minutes or until pasta is tender, stirring
after 10 minutes. Meanwhile, coarsely chop basil with Chef’s Knife. Reserve 2 tbsp for garnish. Grate
cheese using Rotary Grater.

3. Carefully remove baker from microwave and remove lid, lifting away from you. Add remaining basil,

cheese and chicken to baker; mix well. Garnish with reserved 2 tbsp basil, additional Parmesan cheese and black pepper, if desired.

Cook’s Tips: An additional ¾ cup chicken broth can be substituted for the wine, if desired.
Any tube-shaped pasta requiring 9-11 minutes cook time, such as penne or rigatoni, can be substituted for the
mezze penne pasta.

To grill chicken in the Grill Pan, season 2 chicken breasts, about 6 oz each, with salt and black pepper. Heat Grill
Pan over medium-high heat 5 minutes. Spray pan with oil. Cook chicken 4-6 minutes or until grill marks appear.
Turn chicken over; cook 4-6 minutes or until center of chicken is no longer pink and Pocket Thermometer
registers 170°F.

Yield: 8 servings

    I love fondue, since it’s quick and easy to put together. Just sub chicken broth for the white wine to please kids.

    Cheddar Tomato Fondue
    Recipe from Gourmet Magazine

    2/3 cup finely chopped drained canned tomatoes
    2 garlic cloves, lightly crushed
    2 tablespoons unsalted butter
    3 tablespoons dry white wine
    1 tablespoon cornstarch
    12 ounces Cheddar, coarsely grated (3 cups)
    Accompaniment: cubes of French bread

    Cook tomatoes and garlic in butter in a 4-quart heavy saucepan over moderately low heat, stirring occasionally, until most of liquid is evaporated, about 5 minutes. Stir together wine and cornstarch in a small bowl, then stir into tomatoes and simmer gently, stirring, 1 minute. Discard garlic. Add Cheddar by handfuls, stirring until completely melted. Serve in a fondue pot set over a flame.

    One easy quick recipe that I make it I take Lipton Flavored Rice, usually the creamy chicken flavor, and I put it in a large baking dish with the water and butter that it takes for the rice. Then I put in either whole boneless skinless chicken breasts or boneless chicken breast strips and mix it in with the rice and water. I cook it in the over for about 45 minutes. It makes the chicken really moist and delicious and it is all in one pan.

    “Peanut Butter On A Spoon”

    Ingredients:

    1 Tablespoon of peanut butter

    Directions:

    Use spoon to get one tablespoon of peanut butter out of jar.

    Enjoy!

    Brie Dip:
    1 wheel of Brie
    1/4 cup slivered almonds
    2 tbsop butter

    Butter the brie, add slivered almonds and place in microwave for 45 seconds or until bubbly..yum!

    Sliced Ham (thick sandwich type)
    Cream Cheese
    Dill Pickle
    Toothpicks

    Slice ham in half
    Spread cream cheese on ham
    Slice pickles in half long wise
    Roll up and secure with a toothpick

    creamy chicken casserole

    2 large chicen breasts, boiled and shredded
    1/2 package cooked spaghetti noodles
    1 can cream soup (chicken, mushroom, broccoli, etc.)
    1 can diced green chiles
    2 cups cheese
    salt, pepper and garlic powder to taste

    combine all ingredients except 1/2 cup cheese in a casserole dish. top with remaining cheese and bake at 350 for 20-30 mins.

    Spaghetti salad
    Cook one package spaghetti noodles and drain.
    The following is to individual taste:
    Combine italian dressing, sliced ripe olives, chopped green onions, red or green pepper slices, sliced or diced cucumber, cherry tomatoes (halved). Mix with cooked spaghetti.
    Season to taste with Salad Supreme or other similar seasoning.
    Serve either warm or chilled. Great either way.

    INGREDIENTS (Nutrition)

    * 1 (8 ounce) package cream cheese
    * 1 1/2 cups confectioners’ sugar
    * 1 cup peanut butter
    * 1 cup milk

    1. Beat together cream cheese and confectioners’ sugar. Mix in peanut butter and milk. Beat until smooth. Fold in whipped topping.
    2. Spoon into two 9 inch graham cracker pie shells; cover, and freeze until firm.

    Pancakes

    1 ½ cups flour

    3 ½ tsp baking powder

    1 tsp salt

    1tbs sugar

    1 ¼ cups milk

    1 egg

    3 tbsp butter melted.

    Mix all ingredients together. Prepare as you would any other type of Pancake.

  14. Hot Turkey Sandwiches

    bread
    turkey lunchmeat
    gravy
    boxed stuffing
    canned cranberry sauce

    Put turkey, prepared stuffing and gravy on bread. Microwave for 1-2 minutes. Add cranberry sauce.

    Blackberry Cobbler
    4 cups fresh blackberries
    1 tablespoon lemon juice
    1 large egg
    1 cup sugar
    1 cup all-purpose flour
    6 tablespoons butter, melted
    Whipped cream (optional)
    Garnish: fresh mint sprig

    Preheat oven to 375°. Place blackberries in a lightly greased 8-inch square baking dish; sprinkle with lemon juice. Stir together egg, sugar, and flour in a medium bowl until mixture resembles coarse meal. Sprinkle over fruit. Drizzle melted butter over topping. Bake at 375° for 35 minutes or until lightly browned and bubbly. Let stand 10 minutes. Serve warm with whipped cream, if desired. Garnish with fresh mint sprig, if desired.
