Grilled Chicken Penne al Fresco

I told you I’d share the Grilled Chicken Penne al Fresco recipe from the Pampered Chef party and I am!  This is a recipe that can be made on the stove or in the microwave using the Deep Covered Baker.  It’s a time saving, delicious, and healthy meal! You can see a few more pictures in my original post!

INGREDIENTSPampered Chef Deep Covered Baker

  • 4 garlic cloves, peeled
  • 2 cups grape or cherry tomatoes
  • 3 cups uncooked mezze penne pasta
  • 3 cups chicken broth
  • ¾ cup dry white wine such as Chardonnay
  • ½ tsp each salt and coarsely ground black pepper
  • 1¼ cups lightly packed fresh basil leaves, divided
  • 1 oz Parmesan cheese, grated (about ¼ cup packed)
  • 2 cups diced grilled chicken breasts
  • Additional grated fresh Parmesan cheese
  • coarsely ground black pepper (optional)

DIRECTIONS

1. Spray Deep Covered Baker with olive oil using Kitchen Spritzer. Slice garlic into baker using Garlic
Slicer
. Add tomatoes. Cover; microwave on HIGH 4-5 minutes or until tomatoes begin to burst, stirring
after 2 minutes. Crush tomatoes using Mix ‘N Chop. Add pasta, broth, wine, salt and black pepper.

2. Return baker to microwave; cover and microwave on HIGH 16-18 minutes or until pasta is tender, stirring
after 10 minutes. Meanwhile, coarsely chop basil with Chef’s Knife. Reserve 2 tbsp for garnish. Grate
cheese using Rotary Grater.

3. Carefully remove baker from microwave and remove lid, lifting away from you. Add remaining basil,

cheese and chicken to baker; mix well. Garnish with reserved 2 tbsp basil, additional Parmesan cheese and black pepper, if desired.

Cook’s Tips: An additional ¾ cup chicken broth can be substituted for the wine, if desired.
Any tube-shaped pasta requiring 9-11 minutes cook time, such as penne or rigatoni, can be substituted for the
mezze penne pasta.

To grill chicken in the Grill Pan, season 2 chicken breasts, about 6 oz each, with salt and black pepper. Heat Grill
Pan over medium-high heat 5 minutes. Spray pan with oil. Cook chicken 4-6 minutes or until grill marks appear.
Turn chicken over; cook 4-6 minutes or until center of chicken is no longer pink and Pocket Thermometer
registers 170°F.

Yield: 8 servings

    On nights when I am feeling lazy I just cook a few tilapia filets in the oven, mix up black beans, corn and red onion (I generally have onion on hand already sauteed). I plate the tilapia on the mixture with cilantro on top. Yummy!

    Ginger Syrup

    2 C Peeled sliced ginger
    2 C sugar
    2 C water

    Boil in a saucepan about 8 minutes, cool and strain. Great to mix with soda water for home made ginger ale or on fruit. Yum!

    For a quick & easy fruit dip, mix together 8 oz. softened cream cheese and small container of Marshmallow fluff. I like to add a few drops of red food coloring to turn it pink. Very good with strawberries!

    Denver breakfast

    1/2 C Egg Beaters
    1oz 2% Veleeta Cheese.
    Onion * any type*
    Ham or Turkey or both 98% fat free.

    1/2 wheat enlish Muffin
    1/8 tsp lite butter *for muffin*
    1/2 tab sugar free jelly

    cook egg beaters in omlet pan ,add onion * any vegs* turky/ham and cheese, flip one side and melt.

    I make pasta and while it cooks, saute onion, garlic, tomatoes, chopped kalamata olives, seasoned with thyme and oregano, a little salt and pepper, in olive oil until they are cooked down. Serve over the pasta with lots of freshly grated parmesan.

    i have the older garlic press from pampered chef. Had it for 8 years or so now, and it still is an everyday tool for me. I would love to have the newer one, looks so cool!

    I found this online and have used it several times. Saves me tons of money since @ Olive G@rden, it is about $15.99 per plate. I made it with rib eyes for less than $20 bucks!!

    I cheated last time though and used the packaged dry alfredo sauce (gasp) and it turned out just as yummy and saved me time! lol

    Serving Size 1 (364g)

    Recipe makes 6 serving
    1 (2 1/2 lb) boneless beef top sirloin steaks
    * 1 1/2 cups Italian dressing (I used Newman’s Own Lighten Up Italian)
    * 1 tablespoon chopped fresh rosemary
    * 1 tablespoon fresh lemon juice (optional)
    * 1 lb uncooked pasta, cooked according to pkg directions
    * 4 cups chopped spinach
    * 2 cups alfredo sauce
    * 1/2 cup chopped green onion
    * 3 tablespoons gorgonzola, crumbled
    * 2 tablespoons gorgonzola (for sprinkling on top of finished dish)
    * 2 tablespoons chopped sun-dried tomatoes
    * 2 tablespoons balsamic vinegar, glaze (I used the bottled glaze from igourmet.com)
    * chopped fresh parsley leaves, for sprinkling

    MARINATED STEAK PREPARATION;.

    Cut beef into 1/2″ cubes and set aside.

    Mix the Italian dressing, rosemary and lemon juice, if using, together.

    Add the marinade to the beef toss and let marinate for at least 1 hour.

    SPINACH GORGONZOLA SAUCE:.

    Heat Alfredo sauce in large sauté pan.

    Add onion, spinach and Gorgonzola cheese.

    TO PUT THE DISH TOGETHER:.

    Grill steak to desired doneness.

    Place drained pasta in sauté pan with heated Alfredo sauce.

    Toss pasta with sauce and place on a large platter.

    Sprinkle remaining Gorgonzola cheese, sun dried tomatoes and parsley leaves.

    Easy Beef Stew (crockpot):
    2 lbs. beef stew meat
    1 envelope dry onion soup mix
    1 can tomato sauce
    1 can cream of mushroom soup

    Combine all ingredients in crock pot and cook on low for 8 hours. Serve over rice or noodles.

    I make a noodle casserole dish using: 1 pound ground beef cooked with garlic, salt,pepper, onions in a skillet until done.
    Boil sea shell pasta until done. Combine the meat and the pasta in a casserole dish along with 1/2 package of longhorn cheese cut into chunks and one can of Italian diced tomatoes. Mix together and bake at 350 for 25 minutes.

    Pulled pork crockpot recipe
    pork roast
    cup of ginger ale
    one onion
    bbq sauce
    Place roast and onion and ginger ale in pot for 12 hrs. Shred meat off bone and drain any fat, place back in crock pot with BBQ sauce for 4 more hrs.

    A quick recipe that my family loves is pot roast. I put a 4-5 lb. rump roast into my crockpot, pour 2 cans of beef broth over, throw in some potatoes and baby carrots, and sprinkle a package of onion dip seasoning over the top. Cook on high for 6 hours, and you’re good to go!

    bake on oven to warm and eat with crackers
