Healthy Cranberry Oatmeal Clusters

In my goal to be fit, not only am I working out to the Your Shape Wii Game, I’m also eating things healthier when I can.  Trying to find healthy substitutions to replace the easy accessible junk food can prove to be difficult at times.  I realized that trying to find prepackaged healthy food was the real problem. I needed to discover ways to create healthy snacks “from scratch”.  So instead of buying granola bar type snacks, I decided to make my own version. Since granola seems to be an ingredients that’s hard to come by around here, I chose to use oatmeal as a substitute but you could use granola (and I recommend you do) to make this recipe.

INGREDIENTS

  • 1/3 cup light peanut butter
  • 1/3 cup pure maple syrup
  • 2 egg whites
  • 1 tsp pumpkin pie spice
  • 2 1/3 cups Quaker Oats (or low-fat granola)
  • 3/4 cup dried cranberries (I added a few more;)

DIRECTIONS

Preheat oven to 250′. Spray a 12-cup muffin pan with light cooking spray and set aside. In a medium bowl, beat together peanut butter and maple syrup on medium speed with an electric mixer, although I used a wisk. Add egg whites and pumpkin pie spice and beat again until smooth. Stir in oatmeal and cranberries. Divide mixture evenly into muffin cups. Bake for 30-35 minutes on middle rack in oven. Remove from oven and cool completely before removing clusters from pan. Store in an airtight container or they’ll get hard.

Soo, I sorta forgot about them in the oven and they are little overcooked. I was watching the CNN livestream of the US honoring WASP.
