Off the Cuff Green Beans

This side dish recipe was submitted by Skeet.  She happens to be one of my favorite ladies:D and she says, ” I wanted to do something different with green beans for our holiday meal this year. I made this up on the spot.”

INGREDIENTS:

  • 1 1/2 pounds of fresh green beans, cleaned and cut into 1-2 inch bits
  • 2 thin slices of onion
  • 1/4 cup of fresh mushrooms, washed and sliced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Saute the green beans, onions and mushrooms in olive oil until nicely browned. Add just a little water, turn the heat down and simmer until done – I like my green beans slightly crispy and it took just a few minutes. Add salt and pepper to taste and serve with pride. These are really delicious, with the onions and mushrooms serving a a subtle enhancement to the fresh green bean taste. Enjoy!
