We are breakfast eaters around here so I can’t really afford to buy premade stuff like those bags full of pancakes or boxes of waffles. It’s much cheaper to make my own from scratch and I have to say, much better tasting in my opinion. They are very simple to make and even had my toddler help throw some powdered sugar on top for fun! We eat pancakes with scrambled eggs and bacon. YUM! If pancakes aren’t your thing, try a traditional breakfast, bacon brunch bites or country fried sandwich.
INGREDIENTS:
- 1 egg
- 1 cup flour
- 3/4 cup milk ( I usually add a bit more to my desired consistency)
- 2 Tablespoons oil
- 1 Tablespoon sugar
- 3 teaspoons baking powder
- 1/2 teaspoon salt
DIRECTIONS:
Mix your dry ingredients together, then add in your wet ingredients. Mix until smooth and to desired consistency. I pour into a measuring cup I have with a pour spout but you can use whatever. Pour out onto semi-hot griddle; not too hot or the middle of your pancakes won’t cook through. I use my tortilla griddle. When it’s bubbled up on one side, flip! Serve with your favorite syrup, fruit or sugar!
HINT: For more flavor, add a bit of vanilla!

Then add some of my family’s favorite spices to the mix (cinnamon, ginger, gloves, nutmeg and allspice) along with 2 tbsp of vanilla and frozen blueberries. My daughter (whose only one) ate 3 of the pancakes as fast as I could get them on her plate. Hugh success!

instead of 2 Tablespoons oil, I’ve put 2 Tablespoons of butter..
I added one more tablespoon of sugar, and a little of vanilla!

I used what we had in the house, whole wheat pastry flour and vanilla almond milk. Worked just fine!

The only question that arise is: What exactly is the temperature you put it on. I have a griddle I use all the time, and for the past 7 months or so, my pancakes have been turning out to be uncooked in the middle. I’ve been using it at the same heat for the past 2 years.
My griddle has a temperature range of warm (posibly around 100 or so) to 400 F. and I’ve been putting it at 300. Is that too much or all right? Thanks.
Gosh, honestly, I don’t know. I have gas here and so I wouldn’t have any clue as to what temp to put it on. Maybe someone else here can answer that. Sorry.

Play with the heat. If your pancakes aren’t cooking in the middle the griddle is either too hot or too cold. I use gas too but a med. To low heat is favorable. Your Pancakes will cook evenly and start to form bubbles right away also making the sizzle sound as you poor the batter when you’ve found the perfect temp.
Its my sons first christmas and our first christmas as a family. We always had pancakes christmas morning for breakfast. Well its 1am and it just dawned on me I ain’t got any pancake mix so I searched for homemade pancakes and these look awesome!! Ima get up in a few hours and make em for my family. Can’t wait to try these and come back for more recipes later on!!!

these where ok pancake they seemed dryon the inside. My family really didnt lik them. the outside was really rubbery.
Sorry your experience wasn’t great Savannah. With over 60 positive comments on these, perhaps you cooked them too long or the batter consistency was off.

I TOTALLY LOVE this recipe!!! I can’t believe how easy it it to make! And they taste incredible!!! They came out nice and fluffy, not at all dry!!! I’m so gonna stop buying pancake mix, nothing beats a good homemade recipe!
