A fantastic way to use up leftover crockpot pork roast! Simple, tasty and sure to warm up any tummy that’s thinking, “Come on already…isn’t winter over yet? It’s time to move onto pasta salads and grilled chicken!!!”
- 1 lb leftover pork roast
- 1 granny smith apple
- 1/2 cup chopped walnuts
- 1/2 cup apple juice
- 1/4 cup syrup or honey
- 1/2 bag Cascadian Farm Green Beans
- 1 box Unlce Bens wild rice and long grain rice
- 1 T olive oil
- Garlic powder
- Salt and pepper
3. Peel and Dice apple, then throw into large skillet. Add apple juice, syrup and walnuts. Saute for 4-6 minutes until juice reduces down. Add pork roast, stir mixture through pork and let cook for 3-4 minutes.
4. Serve Apple Walnut Pork with wild rice mix and green beans.
















I make my pork roast often with apples or syrup, I love the idea of combining both and adding walnuts to some extra crunch.
