INGREDIENTS:
- 1 cup unsalted butter, softened
- 1 egg yolk
- 1 cup icing sugar
- 3 cups all-purpose flour
- 1/4 tsp salt
DIRECTIONS:
* Preheat oven to 350 degrees F.
* Cream together the butter and egg yolk.
* Add the icing sugar and beat until smooth.
* Mix the flour and salt together, then add it in three batches to the buttery mixture. Mix until crumbly.
* Knead the dough with your hands until it is soft and pliable. On a lightly floured surface, roll the dough into a rectangle with about a 1/2-inch thickness.
* Cut the rectangle into strips and prick the tops of each strip with a fork. Transfer to an ungreased cookie sheet.
* Bake in preheated oven for 18 to 20 minutes or until lightly browned.
* Allow to cool on the cookie sheet for 5 to 10 minutes before transferring to a rack.

Tina & Jules, I hope you like the recipe. Let me know how it turns out!
I have never attempted shortbread – always thought it was too difficult. These look great – and such an easy recipe to follow. Thank you for sharing.
Sounds delicious! I have never tried making shortbread cookies but do love eating them.

These look great..I may be a little naive, but what is icing sugar? Is that powdered sugar?
Can’t wait to try it.
Holy cow~ this is such an easy recipe. And they taste like it took all day to make them. My daughters and I have made 3 batches of them. We stacked them up and tied them with some Martha red/white ribbon. They look so cute.
Thanks for easy recipes. That makes cooking so much fun. When you can make something really good and it not take forever-with a ton of ingredients.
Love this recipe. Shortbread the way I remember it as a child.
These sound great! I’ve always wondered, though, are the fork pricks just for looks or do they serve a purpose?
Merry christmas!
What is icing sugar? I would like to make these. They look great.
Sorry, I’ve been away for a bit.
Thanks for answering – icing sugar is the same as powdered sugar.
I’m glad you find it to be an easy and yummy recipe. Hope you all had a wonderful holiday!
