Sour Cream Cheescake

Ingredients:

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 1/3 cup sugar
  • 3 8 oz. pkg cream cheese
  • 1 cup sugar
  • 1 egg
  • 1 tablespoon vanilla
  • 1 teaspoon lemon juice
  • 2 cups sour cream
  • 1/2 cup sugar
  • 1 teaspoon vanilla

Directions:

Combine graham cracker crumbs, 1/3 cup sugar and melted butter. Press mixture into bottom of a springform pan. Chill to set.

Combine cream cheese, egg, 1 cup sugar, vanilla, lemon juice and beat till creamy. Spread carefully over graham crust. Bake 25 minutes in 350F degree oven. Cool 10 minutes.

While cooling, blend together sour cream, ½ cup sugar and vanilla.
Pour very gently on top of cake. Bake an additional 5-6 minutes. Let cool. Refrigerate 8-12 hours before serving (or until completely
set.)

Variations: Serve with fresh fruit, drizzled chocolate or your favorite topping.
