Sweet Flake Potato Pancakes

INGREDIENTS

  • 4 medium baking potatoes, peeled and finely shredded
  • 1 small onion, grated
  • 2 large eggs, beaten
  • 1/2 cup rolled oats
  • 1 cup corn flakes, crumbled
  • 1 tablespoon honey
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • canola oil
  • 1/2 cup sour cream
  • 1/2 teaspoon hot sauce

DIRECTIONS

Squeeze out liquid from the potatoes and onions. In a large bowl, combine the potatoes, onions, eggs, oats, corn flakes, honey, salt, and pepper. In a large skillet, heat 1/2 inch of oil over medium-high heat. To make pancakes, take 1/4 cup of mixture each and form into patties. Fry in skillet 4 minutes on each side, or until golden brown and transfer to paper towels. Repeat with remaining mixture. Combine sour cream with hot sauce in a small bowl. Serve pancakes with dollops of the sauce.
