			<content:encoded><![CDATA[<!-- Start Shareaholic LikeButtonSetTop Automatic --><!-- End Shareaholic LikeButtonSetTop Automatic --><p>I made these Honey Sweet Cookies for the cowboy crew the other day at this new ranch we&#8217;re working for and they seemed to be a hit, especially with my 2 year old!  Cookies are always hit with working cowboys <img class="alignright" title="Ghirardelli Cacao Semisweet" src="http://i206.photobucket.com/albums/bb107/cowboytf/GhirardelliCacaoSemisweet.gif" alt="" width="191" height="250" />because they don&#8217;t want to over fill themselves but they still want to soothe that sweet tooth.  These are very easy to make and they stay chewy for a long time.  I opted to use the <a href="http://www.ghirardelli.com/">Ghirardelli Chocolate</a> this round and it made the cookies absolutely divine!  This is a new line of all-natural baking products from Ghirardelli and I can&#8217;t wait to try the Cacao Extra Bittersweet and the Cacao Unsweetened baking chocolate.</p>
<p><strong>INGREDIENTS:</strong></p>
<ul>
<li>1 1/4 c. flour</li>
<li>1/2 tsp. baking soda</li>
<li>1/8 tsp. salt</li>
<li>1 stick butter (1/2 cup)</li>
<li>1/4 c. sugar</li>
<li>1/2 c. honey</li>
<li>6 oz.  (approx. 1 cup) <a href="http://216.119.104.34/products">Ghirardelli Gourmet Semi-Sweet Chocolate Chips</a> (or any kind you prefer)</li>
</ul>
<p><strong>DIRECTIONS:</strong></p>
<p>Preheat oven to 300&#8242;.  In a small bowl combine flour, sod, and salt.  Mix well with a wire whisk and set aside.  In a medium bowl, blend butter, sugar, and honey at medium speed.  Beat until light and soft, then scrape sides of bowl to make sure everything gets blended well.  Add the flour mixture until blended well.  Finally fold in chocolate chips being careful not to over-mix.</p>
<p>Drop dough by rounded teaspoons onto ungreased cookie sheet, 1 1/2&#8243; apart.  Bake for 18 to 20 minutes or until light golden brown.  Immediately transfer cookies to a cool, flat surface.  VIOLA:)  ENJOY!</p>

<p><strong>INGREDIENTS</strong>:</p>
<ol>
<li>1/2 cup soft butter</li>
<li>1/2 cup packed br. sugar</li>
<li>1/2 cup white sugar</li>
<li>1 egg</li>
<li>1 Tbsp cold water</li>
<li>1/2 tsp vanilla</li>
<li>1 1/2cup + 2Tbsp flour</li>
<li>1/2 tsp baking soda</li>
<li>1/4 tsp salt</li>
<li>1 pkg small peppermint</li>
</ol>
<p><strong>PREPARATION</strong>:</p>
<p>Combine butter, both sugars and egg together and beat till fluffy.  Stir in water and vanilla. In a separate bowl combine dry ingredients.  Add to butter mixture and beat well.  Chill dough for about 20 minutes.<br />
Shape about 1Tbsp dough around each peppermint patty.  Place about 2&#8243; apart on cookie sheet.<br />
Bake 8-10 min. in 400F oven.</p>

<p><strong>INGREDIENTS</strong>:</p>
<ul>
<li>1/2 cup butter, softened. For the love of all that&#8217;s holy, use real butter. Margarine is stupid when baking.</li>
<li>That&#8217;s not just what I say, it&#8217;s what I know!</li>
<li>1/2 cup chunky or smooth peanut butter (I use smooth but that&#8217;s just because I hate chunky. You do whatever you want).</li>
<li>1/2 cup granulated sugar</li>
<li>1/2 cup brown sugar, firmly packed</li>
<li>1 egg</li>
<li>1 1/4 cups all-purpose flour</li>
<li>1/2 teaspoon baking powder</li>
<li>1/2 teaspoon baking soda</li>
<li>1/4 teaspoon salt (I usually put in 1/2 tsp but that&#8217;s because I like salty/sweet)</li>
<li>1 cup semisweet chocolate chips (or more, no more than 1 1/2. Trust me on this one, you don&#8217;t wanna use milk chocolate semisweet is the way to go. Of course I can&#8217;t stop you from using milk chocolate, but bleh. Why would you? )</li>
</ul>
<p>Your oven should be at 375 degrees F. You&#8217;ll need two bowls &#8211; one for the dry ingredients and one for the wet ones.</p>
<p>Cream the butter, peanut butter and sugars together. Add the egg and mix until *fluffy*.</p>
<p>Blend the flour, baking powder, soda and salt together well. Add these dry ingredients to the butter mixture and mix until it all sticks together. Add the chocolate chips.</p>
<p>Drop cookie dough by teaspoonfuls onto lightly greased baking sheets. Bake for 10-12 minutes at 375 degrees. Take them out at around the 11-12 minute mark. They might not look &#8216;all the way done&#8217;. That&#8217;s okay though because they&#8217;ll finish cooking themselves after they come out of the oven.</p>
<p>If you only have one cookie sheet, make sure to cool your sheet between batches (I run mine under cold water). Otherwise there&#8217;s some weird scientific magical thing that happens and the cookies end up all funny-looking and flat.<br />
