It’s been a struggle for me to eat healthier here on the ranch but one thing that has made it a little bit easier, is the Cooking Light magazine.  I started getting the issues a couple of months ago and am so thankful I did.  I found that you really can make very good meals (esp. desserts!) in a lighter, healthier version and not lose out on the taste.  In fact, the ones I’ve made for my family were undetectable; meaning they didn’t even realize they were healthy versions.

Since I do most everything online, I decided to check out the Cooking Light website which I fell in love with immediately.  I really need resources and support for incorporating healthier meals into our life and the community was a bonus. I expected to see the recipes and all but I’m so glad there is a community. I can see what people substituted or ask what to substitute to make sure the recipe stays healthy.  There are even some workout tips, a marketplace, cooking tips & techniques and so much more!  It really has been a wonderful place for me.

If you’re in a hurry, check out the 20minute meals they have.  I personally like the  Chicken Puttenesca with Angel Hair Pasta.
