			<content:encoded><![CDATA[<!-- Start Shareaholic LikeButtonSetTop Automatic --><!-- End Shareaholic LikeButtonSetTop Automatic --><p><strong>Easter</strong> is just around the corner and I&#8217;ve been on the prowl for some <strong>Easter goodies</strong> to make for Truett&#8217;s class.  I&#8217;ve seen these &#8216;<strong>Easter Carrots</strong>&#8216; before but most of them were filled with candy; reese&#8217;s pieces, orange jelly beans, orange m&amp;ms, etc.  Because there is a little girl in Truett&#8217;s class that&#8217;s allergic to red dye (and yes, orange stuff does have red dye in it), I chose to use <strong>Goldfish Crackers</strong>.   They&#8217;ll need something &#8216;bready&#8217; to soak up sugar from all that Easter candy anyways!</p>

<p>These <strong>Easter carrots</strong> are one of the easiest crafts to make and will make your little bunny grin from ear to ear.  Truett helped me by cutting ribbon so let your kiddos help if possible. It just makes the experience that much more fun!  You can find <a href="http://www.walmart.com/easter" rel="nofollow" target="_blank">Easter crafts &amp; recipes</a> at Walmart (which is where I bought mine) and be sure to check back soon. I&#8217;ll be posting a couple of other easy goodies that anyone can make!</p>

<p class="quicknotes">I cut off the excess bag so that it didn&#8217;t show as much. I also only filled the bag half way. You could make bigger carrots though if you wanted!  Also, I found that it made the green tail more full if I tied each piece of ribbon separately and on opposite sides.  And to make it look perky, instead of falling towards the carrot, I tied a ribbon around the base of all the ties.  You might be able to find different ribbon that works better but we had a limited selection.</p>

<h4 class="ingredients">Ingredients</h4>
<ul class="ingredients">
<li class="ingredient">Crackers (I used two packages for this amount)</li>
<li class="ingredient">2/3 cup oil or a little more(I used olive oil)</li>
<li class="ingredient">1 teaspoon of cayenne pepper (hence firecrackers)</li>
<li class="ingredient">1 pkg of ranch dip (dried dip mix)</li>
</ul>

<ol class="instructions">
<li>Place your crackers in a large gallon size ziploc bag (or a gallon jar).</li>
<li> Combine ingredients and pour into bag all over your crackers.</li>
<li>Toss crackers around in bag until all are coated and let sit about 15 minutes, then serve!</li>
</ol>
<p>I also bought some of the miniature crackers for the kids, and made them less hot.</p>

<p><em>Tip: To make things even healthier, you can substitute several of the items with low fat products like the cream cheese, mayonnaise, and sour cream.And I always shop at Walmart for everything I need!<br />
</em></p>

<p><strong>Knorr&#8217;s Spinach Dip</strong></p>
<ul>
<li>1 (10 oz.) pkg. frozen chopped spinach, thawed (do not use fresh)</li>
<li>1 1/2 c. sour cream</li>
<li>1 c. mayonnaise (I use Hellmann&#8217;s)</li>
<li>1 (4 oz.) pkg. <a href="http://www.letsmakeknorr.com/">Knorr</a> vegetable soup mix</li>
<li>1 (8 oz.) can water chestnuts, finely chopped</li>
<li>3 green onions, finely chopped</li>
<li>Round Loaf of <a href="http://www.kingshawaiian.com/">King&#8217;s Hawaiin Bread</a></li>
</ul>
<p>Squeeze spinach until dry. In medium bowl, stir together spinach, sour cream and soup mix. Add finely chopped water chestnuts and green onions. Cover and refrigerate 2 hours or overnight. Cut slice from top of round loaf of pumpernickel bread, hollow out loaf to leave shell to contain dip. Use bread removed from shell and top slice to cut into bite size pieces. Butter inside of bread shell, fill loaf with dip and place on platter and surround with crackers or even vegetable sticks.</p>

<p>Obviously no recipe involved but this was a hit! Cubed cheese surrounded by a variety of deli meats.  Oh so good!</p>

<p><strong>Basic Cream Cheese Fruit Dip</strong></p>
<ul>
<li>1 8-ounce package cream cheese,softened</li>
<li>3 tablespoons sugar</li>
<li>1 cup sour cream</li>
<li>1 teaspoon vanilla extract</li>
</ul>
<p>Combine all ingredients and beat until smooth and creamy. For <strong>Marshmallow Fruit Dip</strong>:  Add 1/2 cup marshmallow creme to the basic recipe.</p>

<p><strong>INGREDIENTS</strong></p>
<ul>
<li>1 lb ground beef</li>
<li>½ small onion chopped</li>
<li>6 to 8 saltine crackers, crushed</li>
<li>1 egg, beaten</li>
<li>1 can cream of mushroom soup, divided</li>
<li>1 cup cheddar cheese</li>
</ul>
<p><strong>DIRECTIONS</strong></p>
<p>Combine the ground beef, onion, egg and about ¾ of the soup in a bowl. Add the crackers to the beef and mix till combined.  Put in a baking dish and form it like a meat loaf. Spread the remaining soup on top.<br />
(It is better to have a casserole with higher sides so that when you top with mashed potatoes there will be room)</p>
<p>Bake @ 350 degrees for approx. 1 hour  While it is baking prepare the mashed potatoes.  When the beef is done top with the mashed potatoes and sprinkle the cheese on top.  Place back in oven till cheese has melted.</p>
<p>The lovely dish is <a href="http://mywoodenspoon.com/TempTations" style="" target="_blank" rel="nofollow" onmouseover="self.status='http://mywoodenspoon.com/TempTations';return true;" onmouseout="self.status=''">Temp-Tations</a> from QVC.  They offer many beautiful styles, including the one below.  The meal itself isn&#8217;t a pretty one but it always helps to serve it up in something pretty!</p>
