This oatmeal cake is the best ever and this is coming from someone who not a big fan of oatmeal. Not only that, it is very popular among the men. This was something that I cooked for the cowboys and they would tell my husband how much they enjoyed the dessert. I personally think it borders the food porn side…..yeah, it’s that good!
INGREDIENTS:
For the Cake:
- 1 1/4 c Boiling Water
- 1 c Quick Oats
- 1 stick butter
- 1 c brown sugar
- 1 c white sugar
- 2 eggs
- 1 1/3 c flour
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1 tsp. baking soda
- 1/2 tsp. nutmeg
For the Icing:
- 1/2 stick butter
- 1 c brown sugar
- 1/4 c evaporated milk
- powered sugar
DIRECTIONS:
Mix water, oats, and butter & let stand for 15 minutes. Add remaining ingredients together in a bowl. Add oatmeal mixture to the bowl and mix well. Bake in an 8 x 11 casserole dish at 350′ for 30 minutes.
ICING DIRECTIONS:
Melt ingredients together in saucepan and cool. Add powered sugar until thick enough to pour over cake. Pour over HOT cake! I usually take a toothpick and poke holes throughout the cake so that the icing sinks in…YUMMY!

WOW. I WHIPPED THIS UP IN ABOUT 5 MINUTES (EXCLUDING THE 15 MINUTE WAIT ON THE OATS), PERFECT!!! IT’S THE BEST OF A SPICE CAKE AND A CARROT CAKE ALL IN ONE. ACTUALLY BETTER.. THANKS. I DIDN’T USE THE ICING; THE CAKE IS SO GOOD.

I much prefer the coconut and pecan frosting that came on my mom’s oatmeal cake. That made the cake. Otherwise, the cake recipe is about the same.
May I know whether this oatmeal cake can be kept in the freezer. Will the same be same after we take it out from the freezer?

This is the same recipe passed to me by my Aunt in 1953! You can add almost nay spice… Raisens , candied fruit, dry cranberries and nuts… use your imagination!
My children often ran for the school bus with this in hand!

I’m eating my first piece right now, and it’s amazing! I skipped the icing, but the cake alone is addictive. Definitely a recipe to add to my list of favorites, and the best part is that it takes almost no time at all to make.
For Diabetics type 2… try using 4 Sweet& Low (or other sugar substitute) in place of the white sugar…and in place of the Icing try a sprinkle of cinnamon.
There are a number of tricks you can try as your tastes may very!
I’ve never heard of an oatmeal cake but this sounds good (and it looks like you used your Kitchenaid to make it).
