You can totally make this without a fryer! Just par-boil the fries first for 4-5 minutes, then sieve and dry. Lightly grease a baking pan with oil and make sure the fries are coated. Put them in the oven and either bake at a high temp or broil. Turn every now and then to make sure all sides brown evenly.
This works with halved New Potatoes or even Floury potatoes as well.. They are gorgeous and crispy on the outside and soft and melty inside.

I tried to make sweet potato fries and they came out limp and not crispy. I know what to do now to get a crispy fry. Thanks. I love to eat them with cinnamon and sugar sprinkled on them and I like to dip them in Apple Butter. Mmmmmm. Good.

I love me some sweet potato fries! There is only one place that makes them crispy enough around me and it's an hour drive. I am going to have make them this way! I dont have a fryer but we have been thinking of getting one...they serve them here (Upstate,NY) with butter and honey or maple and honey..yum!

I had some wonderful sweet potato fries about a month ago and have thought about them since then. They were light and crispy like regular fries and dusted with cinnamon sugar. I knew there was a trick to getting them so crispy but couldn't figure it out. Thank you for posting this. I am about to go to the kitchen and give this a try. They should go very nicely with our ciabatta steak sandwiches. I'm very excited!

I love sweet potato fries. I often bake them. However first I cook them in the microwave for 3 minutes, then I put them in the oven. This helps them get crispy instead of being soggy. I sprinkle them with chopped up rosemary, sea salt and Parmesan cheese. Then we dip them in spicy ketchup (just ketchup mixed with spicy chili sauce).
